I don't know if I've mentioned this before but...I've become fond of flour tortillas. Flour tortillas are an incredibly functional staple in the lazy person's diet. They're basically a replacement for bread in sandwiches but there are a few other uses for them. Here are a few simple sandwich-like (and other) ideas. Most of this breaks down into meat+tortilla=wrap. Your basic cold-cut wrap...just add cold cuts, onions, lettuce and cheese. Some sort of hot (or cold) meat wrap...cook chicken, ground beef, steak (or pull out some refrigerated meat you cooked earlier) and add the previously mentioned onions, lettuce, cheese, etc. Something you probably never thought of, a fish stick wrap...yep, you guessed it, toss fish sticks, some cheese (I prefer american cheese on fish stick wraps), lettuce and top it off with tartar sauce. Obviously you could also make soft tacos which...bet you never thought of it this way, are essentially just wraps. Also there's the old standby, burritos. I really like burritos...they're huge, they're cheap and if you're on a diet you can completley avoid putting meat in them without it seeming blah. Burritos are so incredibly easy to make I'm surprised more people don't eat them regularly. Crack open a can of refried beans and black or pinto beans, sour cream, cheese, maybe some rice...toss on some salsa. Personally I find normal salsa containing tomatoes a bit too overpowering. I usually make corn salsa (2 cups of frozen corn...obviously thawed, a small chopped onion, half a bell pepper chopped, lime juice and salt to taste). Side note, I usually wet both sides of the tortilla and prepare it on a piece of waxed paper. The waxed paper keeps the burritos from being as messy and the moist tortilla sticks together. Finally, pizza. use a single tortilla for a very thin crust or two tortillas on one side and press them together, top with tomato sauce, cheese and meat...cook it in a frying pan, partly covered.
